Bandung Regency, West Java

Roast level: MEDIUM-LIGHT | Cupping notes: Peach, Guava, and Basil

This washed lot comes from Rancabali, a sub-district in Bandung Regency. Collected from forty-seven small farmers, coffee varietals include Catimor, Tim Tim, Typica, Aundung Sari, and Gayo 2 grown at an altitude of 4,300 feet. Interestingly, this area also serves as a conservation center for animals, including deer and the Javan Gibbon, a primate native to the area.

This coffee utilizes a fully washed process. Ripe cherries are promptly depulped, dry-fermented for sixteen hours, and then thoroughly washed. The parchment coffee is then patio dried, until the optimum moisture content is reached. While washed coffee processing is traditional to the region, it had fallen out of favor until recently as producers transitioned to meet a demand for wet-hulled coffees.

This Java offers a complex cup, with flavors such as peach, guava, and basil.
