Colombia La Terraza is grown by Familia Lasso Guevara deep in the lush Colombian Andes. The area was specifically chosen 20 years ago for its perfect growing conditions, with the goal of creating a space to explore new coffee varieties and processes. La Terraza prides itself as a farm with three generations of knowledge and a passion for innovation. The farm utilizes these strengths by acting as a community hub and educational resource where fellow farmers can come together and collaborate.
This farm’s rich history and commitment to quality has resulted in a coffee where the traditional meets experimental. Yellow Bourbon is an older varietal, while Honey Processing is a fairly new process, especially for this region. Honey processed coffee involves removing the skin from the coffee berry after harvest, allowing the crop to ferment in its mucilage for 30-45 hours before finally being sun-dried. The results are a more tropical flavor profile reminiscent of natural coffees, that retains the clean flavor profile standard to washed coffees. We believe this melding of Yellow Bourbon crop and Honey Process creates not only fascinating play on old and new, but an outstanding cup. Look for sweet, zesty notes of pineapple, pomelo, and papaya, with undertones of sugar cane and butterscotch.
