Her family struggled to make ends meet, sometimes with no food on the table. When Rosalba came to the San Francisco Bay Area, on her own with her two young daughters, it was her first time in America and first time in a city. Rosalba did not know how to read or speak English but made her way, building a life for herself and her children. Yet a lingering passion to lift the people of her homeland spurred Rosalba to draw on what she knew — coffee. With quiet strength, she built a network within San Francisco area coffee circles and sought out assistance from the Mexican consulate in launching her own import\/export business.\u003c\/p\u003e\n\u003cp\u003eAnd Rosalba went home to Bella Vista’s highland coffee farms, with elevations of 4,900 – 5,413 feet and not far from the Mexico\/Guatemala border. Working with producers from Bella Vista meant working with family and friends who are committed to this land where coffee has been responsibly grown for nearly 170 years. The balance of the lot is from nearby small-acreage “out-growers”, at even higher elevations of up to 7,874 feet. The elevation of these crops, allowing a longer growing time to absorb nutrients, along with the natural processing, where the cherries are dried in the shade on raised beds, both contribute to the robust flavors that these beans deliver.\u003c\/p\u003e\n\u003cp\u003eFounded by brothers Asefa and Mulugeta Dukamo in 2006, Daye Bensa coffees have won numerous accolades, including three among the Good Food Award 2019 Finalists with two being named winners. The awards are given to outstanding products that are sustainably produced. Through Daye Bensa’s out-grower farm partnerships, adjacent village farms commit to organic practices and work closely with Bensa, ensuring high-quality, sustainability and traceability. In return, the company gathers these farmers to celebrate their harvests, receive second payments for their contributions, and recognize those who have consistently delivered high-quality cherries. New initiatives include expanding the farming network with a focus on women farmers and to work with Hawassa University, to help students perform research to improve coffee quality. However, this Sumatra from CSC is unique as it is estate-grown. Estate-grown coffee comes from a single farm, allowing for greater control, consistency, and care during cultivation. Such control allows for lots of unique coffee varietals such as this, which is composed of only Abyssinia and Typica.\u003c\/p\u003e\n\u003cp\u003eAs with most Sumatra coffees, our Bener Meriah is a wet-hulled coffee. This process begins in the standard way – removing the skin of the coffee cherry and then fermenting to break down and remove the mucilage. At this point, the beans would normally be dried to a point of stability before removing the final parchment layer. Wet-hulling instead removes the parchment much earlier, when the moisture of the bean is about three times higher than in other processing methods.
